Equipment

  • Large rimmed baking sheet
  • Mixing bowl
  • Cutting board
  • Knife
  • Instant-read thermometer

Ingredients

Chicken

  • 2 pounds boneless skinless chicken thighs about 8
  • 2 tablespoons olive oil
  • 1 lemon zested, plus 3 tablespoons juice
  • 4 cloves garlic minced
  • 2 teaspoons dried oregano
  • ½ teaspoon dried thyme
  • ¾ teaspoon salt
  • ½ teaspoon black pepper

Vegetables

  • 1 red bell pepper cut into 1-inch pieces
  • 1 yellow bell pepper cut into 1-inch pieces
  • 1 medium red onion cut into wedges
  • 1 medium zucchini halved lengthwise and sliced 1/2 inch thick
  • 1 tablespoon olive oil
  • ¼ teaspoon salt

To finish

  • 2 tablespoons chopped fresh parsley
  • Lemon wedges for serving

Instructions

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, whisk the 2 tablespoons olive oil with the lemon zest, lemon juice, garlic, oregano, thyme, 3/4 teaspoon salt, and the pepper. Add the chicken and toss to coat. Let it sit while you cut the vegetables, or cover and refrigerate for up to 8 hours.
  • On a large rimmed baking sheet, toss the peppers, onion, and zucchini with the 1 tablespoon olive oil and 1/4 teaspoon salt. Spread them in a single layer.
  • Nestle the chicken thighs among the vegetables, spaced apart. Pour any marinade left in the bowl over the chicken.
  • Roast for 20–25 minutes, until the chicken is browned at the edges and reaches 165°F (74°C) in the thickest part and the vegetables are tender. For more color, broil for the last 2 minutes, watching closely.
  • Sprinkle with parsley and serve with lemon wedges.

Notes

Use two baking sheets if one is crowded, so the vegetables roast instead of steaming.
Marinating longer than 8 hours lets the lemon juice soften the chicken’s texture.
Nutrition is an estimate per serving from USDA values for boneless skinless thighs, without sides.

Why Greek Sheet Pan Chicken Works

Boneless skinless thighs are the right cut for a quick sheet pan meal. They stay moist at high heat and finish in about the same time as the vegetables, so nothing overcooks while you wait for something else.

The marinade does double duty. Lemon, garlic, and oregano season the chicken, and the juices that run off during roasting coat the vegetables underneath.

The Greek Lemon and Oregano Marinade

Lemon juice and zest give the bright, tangy flavor. Dried oregano is the classic Greek herb and holds up better in a hot oven than fresh. Thyme adds a little earthiness, and garlic ties everything together.

Even a short marinade while you chop the vegetables makes a difference. If you plan ahead, a few hours in the refrigerator adds more flavor. Avoid marinating overnight, since the acid in the lemon starts to soften the chicken.

Tips for a Better Sheet Pan Meal

Give everything room. Vegetables packed tightly release steam and turn soft instead of browning at the edges. If your pan is small, split everything between two pans.

Cut the vegetables to similar sizes so they cook at the same rate. Zucchini cooks faster than peppers and onion, so slightly larger zucchini pieces help it keep its shape.

Check the chicken with an instant-read thermometer in the thickest part. Thighs of different sizes finish at different times, so take out any that are done first.

What to Serve with Greek Sheet Pan Chicken

Serve it with warm pita, rice, couscous, or quinoa, plus a spoonful of tzatziki. A simple cucumber and tomato salad with red onion completes the plate. For a grain base, our healthy quinoa veggie power bowl pairs well.

Variations

Add cherry tomatoes and Kalamata olives for the last part of roasting, or crumble feta over the top before serving. Chicken breasts can replace thighs; cut them into large chunks so they do not dry out.

Storage and Meal Prep

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven or microwave until hot throughout. For meal prep, divide the chicken and vegetables over rice or quinoa in containers for ready-made lunches.

Greek Sheet Pan Chicken FAQ

Can I use bone-in chicken thighs? Yes, but they take noticeably longer to cook through than boneless thighs, so add the vegetables partway through. Check the chicken with a thermometer near the bone.

What goes well with Greek sheet pan chicken? Tzatziki, warm pita, rice, or a Greek salad are the classic sides.

Can I prep it ahead? Cut the vegetables the day before and store them in the refrigerator. Mix the marinade ahead too, and add the chicken a few hours before roasting.
