Ingredients

  • 1 pound beef sirloin thinly sliced
  • 2 cups mixed vegetables bell peppers, broccoli, carrots, snap peas
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger minced
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving

Instructions

  • In a bowl, combine the sliced beef with soy sauce, oyster sauce, and cornstarch. Mix well and let marinate for about 10 minutes.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the marinated beef and cook for 3–4 minutes until browned. Remove from the skillet and set aside.
  • Add the remaining tablespoon of oil to the skillet. Add garlic and ginger and sauté for about 30 seconds until fragrant.
  • Add the mixed vegetables and stir fry for 4–5 minutes until tender-crisp.
  • Return the beef to the skillet and stir to combine with the vegetables. Cook for an additional 2 minutes to heat through.
  • Season with salt and pepper to taste.
  • Divide into meal prep containers and serve with cooked rice or quinoa.

Notes

For best results, slice the beef against the grain to keep it tender. This meal prep stores well in the refrigerator for up to 4 days and reheats easily in the microwave or on the stovetop.
