Equipment

Ingredients

  • 2 cups cooked chicken shredded
  • 1 cup shredded cheese cheddar, Monterey Jack, or a blend
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning optional
  • Sour cream salsa, or guacamole for serving (optional)

Instructions

  • In a bowl, combine the shredded chicken with taco seasoning if using. Mix well to evenly coat the chicken.
  • Heat a skillet over medium heat and add a small amount of olive oil.
  • Place one tortilla in the skillet and sprinkle cheese over half of the tortilla.
  • Add a portion of the seasoned chicken on top of the cheese, then sprinkle with more cheese.
  • Fold the tortilla in half and cook for 2–3 minutes per side, until golden brown and the cheese is melted.
  • Remove from the skillet and repeat with remaining tortillas.
  • Slice into wedges and serve warm with sour cream, salsa, or guacamole if desired.

Notes

For extra flavor, add black beans, corn, or jalapeños. Swap shredded chicken for rotisserie chicken to save time.
