Ingredients

  • 4 boneless skinless chicken breasts
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 cup fresh spinach
  • Fresh basil for garnish (optional)

Instructions

  • Season both sides of the chicken breasts with salt and black pepper.
  • Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5–7 minutes per side until golden and cooked through. Remove and set aside.
  • In the same skillet, add the garlic and sun-dried tomatoes and cook for 1–2 minutes until fragrant.
  • Pour in the heavy cream, then stir in the Parmesan cheese and Italian seasoning. Simmer for 2–3 minutes until the sauce thickens slightly.
  • Add the spinach and return the chicken to the skillet, cooking until the spinach wilts and the chicken is heated through.
  • Remove from heat, garnish with fresh basil if desired, and serve warm.
