- 4 boneless skinless chicken breasts
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 1 cup sun-dried tomatoes chopped
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 cup fresh spinach
- Fresh basil for garnish (optional)
Season both sides of the chicken breasts with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5–7 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, add the garlic and sun-dried tomatoes and cook for 1–2 minutes until fragrant.
Pour in the heavy cream, then stir in the Parmesan cheese and Italian seasoning. Simmer for 2–3 minutes until the sauce thickens slightly.
Add the spinach and return the chicken to the skillet, cooking until the spinach wilts and the chicken is heated through.
Remove from heat, garnish with fresh basil if desired, and serve warm.
