Equipment

Ingredients

  • 2 salmon fillets 6 oz each
  • 1 bunch asparagus trimmed
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • Lemon wedges for serving
  • Chopped fresh parsley optional

Instructions

  • Season the salmon fillets with salt and pepper and set aside.
  • In a large skillet over medium heat, melt 2 tablespoons of butter. Add the asparagus and sauté for 3–4 minutes until tender-crisp. Remove from the skillet and set aside.
  • Add the remaining 2 tablespoons of butter to the skillet. Once melted, place the salmon fillets skin-side down and cook for 4–5 minutes until golden.
  • Flip the salmon and cook for another 3–4 minutes, until cooked through.
  • Add the minced garlic and lemon juice to the skillet and spoon the garlic butter over the salmon.
  • Return the asparagus to the skillet, warm through, and serve immediately with lemon wedges and parsley if desired.

Notes

For extra flavor, finish the salmon with a pinch of red pepper flakes or swap asparagus for green beans or broccolini.
