Ingredients

  • 2 cups cooked brown rice or white rice
  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups mixed vegetables broccoli, bell peppers, carrots
  • Fresh herbs for garnish optional

Instructions

  • Prepare the rice according to package instructions and set aside once cooked.
  • In a bowl, mix olive oil, garlic powder, onion powder, paprika, salt, and pepper. Coat the chicken breasts evenly with the seasoning.
  • Heat a skillet over medium-high heat and cook the chicken for 6–7 minutes per side, or until fully cooked. Remove from heat and let rest before slicing.
  • In the same skillet, sauté the mixed vegetables for 5–7 minutes until tender but still crisp.
  • Assemble the meal prep bowls by dividing the rice, sliced chicken, and vegetables evenly among containers.
  • Allow to cool before sealing and storing in the refrigerator.

Notes

These meal prep bowls can be stored in the refrigerator for up to 4 days. Add fresh herbs or a light sauce after reheating for extra flavor.
