Ingredients

  • 4 large bell peppers any color
  • 1 pound ground turkey
  • 1 cup cooked rice brown or white
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheese optional
  • Fresh parsley for garnish optional

Instructions

  • Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place peppers upright in a baking dish.
  • In a large skillet over medium heat, cook the ground turkey until browned, breaking it apart as it cooks.
  • Add the chopped onion and garlic to the skillet and cook for 2–3 minutes until softened.
  • Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and black pepper. Cook for another 2 minutes until well combined.
  • Spoon the turkey mixture evenly into each bell pepper. Top with shredded cheese if using.
  • Cover the baking dish with foil and bake for 25–30 minutes.
  • Remove the foil and bake for an additional 10 minutes, until the peppers are tender and the cheese is melted.
  • Garnish with fresh parsley if desired and serve warm.

Notes

You can substitute quinoa or cauliflower rice for regular rice to make this recipe lower in carbohydrates. Leftovers store well in the refrigerator for up to 3 days.
