Ingredients

  • 1 pound ground beef
  • 1 medium onion chopped
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes, undrained
  • 1 cup corn frozen or canned
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped cilantro sour cream, and avocado for serving (optional)

Instructions

  • Heat a large skillet over medium heat and brown the ground beef, breaking it apart with a spatula. Drain excess fat if needed.
  • Add the chopped onion, bell pepper, and garlic to the skillet. Cook for 3–4 minutes until the vegetables soften.
  • Stir in the diced tomatoes, corn, and taco seasoning. Mix well and let simmer for 5 minutes.
  • Sprinkle the shredded cheese evenly over the skillet. Cover and cook for 2–3 minutes until the cheese melts.
  • Remove from heat and garnish with chopped cilantro, sour cream, and avocado if desired. Serve warm.

Notes

This skillet can be customized with black beans, jalapeños, or different cheeses. Serve with tortilla chips, rice, or wrapped in tortillas for a complete meal.
