Ingredients

  • 4 boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 4 cloves garlic minced

  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 medium red onion sliced
  • 1 medium zucchini sliced
  • Fresh parsley for garnish (optional)

Instructions

  • Marinate the Chicken: In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add the chicken thighs and toss to coat. Marinate for at least 30 minutes.
  • Preheat the Oven: Preheat your oven to 400°F (200°C).
  • Prepare the Vegetables: On a large baking sheet, spread the bell peppers, red onion, and zucchini. Drizzle lightly with olive oil and season with salt and pepper.
  • Add the Chicken: Place the marinated chicken thighs on top of the vegetables.
  • Bake: Roast for 25–30 minutes, or until the chicken is fully cooked and the vegetables are tender.
  • Serve: Remove from the oven, let rest for a few minutes, garnish with fresh parsley if desired, and serve warm.

Notes

For extra flavor, marinate the chicken overnight. You can swap vegetables based on seasonality, such as adding cherry tomatoes or eggplant. Serve with rice, quinoa, or warm pita for a complete Mediterranean meal.
